L'Atelier du Blavon - Atelier du fumage

The Atelier du Blavon located in Bédée in Haute-Bretagne is home to a family history. Jean-Phillippe and Quentin (father and son) work hand in hand to develop and market quality products. They offer a maximum of products from our region (salmon, trout, mackerel, breast, bacon, mignon, magret, breizhi, Breizhsaola, breizh ap' and smoked hake of the Month).
Working in a short circuit represents a real environmental issue, and allows us to highlight and promote small local producers.

Smoking" is actually a food processing technique that aims to flavour a food while ensuring its preservation. In order to do this, the smoker uses the smoke that is released from the combustion of certain plants, in our case Beech. Like salting and drying, smoking is one of the oldest methods of preserving food. The Blavon workshop in Bédée in Upper Brittany works exclusively with cold smoking because it allows for better preservation of food.
Present at the Iffendic market on Thursday evenings from 4pm to 8pm and on Saturday mornings in Bédée.
The workshop is open to individuals on Fridays from 9am to 5pm or by telephone.
